Simple guidelines to ensure your barbecued food is safe to eat

Keep raw meat away from other food because it contains food poisoning bugs. These bugs can easily transfer to ready to eat foods and clean utensils. Here is how to stop these bugs spreading:

  • Do not allow raw meat to touch or drip onto other food;
  • Make sure you wash your hands after handling raw meat;
  • Separate utensils that have been used for raw food from those used for cooked foods;
  • Never put cooked food on a plate or surface that has had raw meat on it unless the surface has been washed thoroughly first.

Cooking on Your Barbecue

  • Before you start cooking ensure that the charcoal is glowing red and has a powdery grey surface;
  • Thaw all frozen food properly before you cook it;
  • Move the food around the barbecue and turn regularly to ensure the food is cooked evenly all over;
  • Check that the centre of the food is piping hot;
  • If you are using raw poultry meat the Food Standards Agency recommend that you microwave the portions before cooking on the barbecue.
